La torta morbida pere e vaniglia è un dolce soffice e delicato con il quale potrete fare un’ottima figura! Ho deciso di proporre la torta sia nella versione vegana sostituendo le uova con i semi di lino con l’arricchimento di farina di farro bianca e olio d’oliva, e sia nella versione classica

Ingredienti versione Vegana Stampo 24 cm
300 gr di farina di farro bianca
3 pere
1/2 bustina di cremor tartaro
3 cucchiai di semi di lino tritati finemente + 3 cucchiai di acqua
150 gr di zucchero di canna
125 ml di yogurt di soia alla vaniglia
80 gr di olio d’oliva
un pizzico di sale
succo di limone
Ingredienti versione classica stampo 24 cm:
300 gr di farina 00
2 uova
3 pere
125 gr di yogurt alla vaniglia
125 gr di burro a temperatura ambiente
150 gr di zucchero
1 bustina di lievito
un pizzico di sale
burro e farina per lo stampo
succo di limone
Preparazione versione veg:
1. Mescolate i semi di lino con l’acqua, mettete in una ciotola con zucchero di canna e olio,sbattete fino ad ottenere un bel composto liscio. Nel frattempo tagliate le pere finemente per la lunghezza e irrorate con succo di limone
2. Aggiungete al composto lo yogurt di soia e amalgamate
3. Mettete infine la farina di farro setacciata con il cremor tartaro. Sbattete con la frusta fino ad ottenere un composto liscio. Mettete l’impasto in una tortiera a cerniera rivestita con carta forno
4. Distribuite sulla superficie le fettine di pera a raggiera. Cuocete a forno già caldo a 160° per circa 35-40 minuti
Preparazione versione classica:
1. Sbattete le uova con lo zucchero ed un pizzico di sale, subito dopo tagliate le pere in fette sottili e irrorate con succo di limone
2. Aggiungete il burro a temperatura ambiente
3. Mettete lo yogurt ed amalgamate il tutto
4. Setacciate la farina con il lievito quindi aggiungete poco per volta al composto
5. mescolate il tutto fino ad ottenere un composto liscio ed omogeneo
6. Imburrate e infarinate lo stampo a cerniera mettete il composto al suo interno e finite distribuendo sulla superficie a raggiera facendole affondare
Cuocete a 160° a forno già caldo per 35 minuti
Ingredients vegan version Mould 24 cm 300 grams of white spelled flour 3 pears 1/2 teaspoon cream of tartar 3 tablespoons of flaxseed + finely chopped 3 tablespoons water 150 grams of brown sugar 125 ml of soy yogurt vanilla 80 grams of olive oil a pinch of salt lemon juice Ingredients classic version mold 24 cm : 300 grams of flour 00 2 eggs 3 pears 125 grams of vanilla yogurt 125 g butter at room temperature 150 grams of sugar 1 package yeast a pinch of salt butter and flour for the mold lemon juice Preparing veg version : 1. Mix the flax seeds with water , put in a bowl with sugar and oil , beat until you get a nice smooth mixture . Meanwhile finely chopped pears for length and sprinkle with lemon juice 2. Add to the mix the soy yogurt and mix 3. Put finally spelled flour sifted with cream of tartar . Beat with a whisk until the mixture is smooth. Put the mixture into a cake tin lined with parchment paper 4. Spread the slices on the surface of pear radially. Bake in preheated oven at 160 degrees for about 35-40 minutes Preparation classic version : 1. Beat the eggs with the sugar and a pinch of salt , just after the pears cut into thin slices and sprinkle with lemon juice 2. Add the butter at room temperature 3. Put the yogurt and mix well together 4. Sift the flour with the baking powder then add gradually to the compound 5. Mix everything until the mixture is smooth and homogeneous 6. Grease and flour a springform pan put the mixture in it and ended up handing over the surface radial pressing them into Bake at 160 degrees in preheated oven for 35 minutes
